Earth Day vegan chilli

My wife Clare and I were inspired by the #meatfreemondays campaign and decided to try it out. Unfortunately, our children were not so inspired and Mondays became a day of half-finished plates and bitter complaints. I decided to try a different tack. My aim was to create meals that were so cunningly disguised that nobody noticed they contained no meat. This recipe was my first success and was gobbled up with gusto. I’m sharing the recipe as a way of marking Earth Day 2021 , and I hope this will be the first of many. Please share your favourite vegan recipe and I promise to try it - I’m keen to increase my repertoire. Ingredients to make 8 servings For the vegan chilli Corn oil 2 medium aubergines, chopped into chunks 1 large onion, chopped into chunks 20 button or chestnut mushrooms 4 cloves garlic, finely sliced 2 cans of chopped tomatoes in tomato juice 2 cans of beans (I used 1 of red kidney beans and 1 of green pigeon peas) Chilli sauce (for example, Tabasco) 4 squares of dark vegan...

Christmas cards... the Uncle J Way

It's three weeks until Christmas, and our new card is at the printers. So I thought that now would be a good time to gather together the Culling family Christmas cards from previous years. I hope that they will bring a smile to your face! 2018 This was the year that Clare I had visited Stockholm for Midsummer weekend, including a visit to the Abba Museum . We were clearly inspired by what we saw there! 2017 2017 was the year to make Christmas great again! Harvey gives a great performance as Ronald J. Chump and doesn't Missy make a lovely Ivanka? 2016 2016 was a sad year that started with the death of David Bowie , and this was our tribute. Hughie and Nancy were lightning quick in their photoshoots, but Missy's version of Diamond Dogs required quite a few takes! 2015 This card was to mark the 40th anniversary of Bohemian Rhapsody . It cost us a small fortune in wigs, but I'm happy to say that they're still being put to good...

Gravadpoké... the Uncle J Way

This is for two dear friends that I saw on the same day recently - Tony and Paola . First, I visited Tony at his allotment and came away with a swag bag full of herbs, fruit and vegetables, including dill and beetroot. I told Tony that I'd use the dill and beetroot to make some gravadlax. That evening, I joined Paola at Kaia at the Ned. We celebrated her birthday with some delicious Hawaiian poké. I promised her and Tina that I'd have a go at making some at home and tell them how it went. "Why not combine the two?", I thought on the way home. So here is a fusion of Europe and the Pacific, of an old and a new favourite - Gravadpoké the Uncle J way. Since this is off the top of my head, there is probably no other way! To make six poké bowls... Make the gravadlax two days before. In a blender, blitz together 100g rock salt, a big handful of dill, 50ml vodka, 50g demerara sugar, the juice and grated rind of one lemon and 200g grat...

Lamb Korma... the Uncle J Way

...with Mushroom Pilau Rice and sweet onion relish Serves 8 This is for the lovely Tommy Lukan , who was visiting London last week. We went to Brick Lane and he tried curry for the first time. He liked it so much that he took some Korma paste back home to (Northern) Macedonia. Here's my advice on what to do with it! Let's make the Lamb Korma first. First, fry 3 packets (1350g) of diced lamb in a mixture of oil and butter. When the meat is browned, add a large aubergine (chopped into small cubes). Fry this until the aubergine is also browned, stirring well, then add a jar of Korma paste and stir thoroughly in. While the first 3 ingredients are cooking, peel and dice 4 medium sized sweet potatoes. Add them to the pot and give it a good stir. Now add two cans of coconut milk. The liquid should cover all the meat and vegetables. That's it for the curry! When it comes to the boil, turn down the heat and let it simmer for one and a half h...
